A truly memorable last meal in Hudson. Our choices ranged across the menu. Everyone, unusually, was thrilled wi their choice. Both main and deserts were outstanding. After a week eating out. For lunch and dinner this was the standout meal for all of us. And the competition was pretty high.

Don't be put off by the outside picnic tables at Aeble. While extremely popular with the dog set, go inside instead for sleek decor. Farm to table menu which changes seasonally. Had the best trout dish I've had in a while. Great mussels too. Our friend said his burger was the best in Hudson. Didn't find the cocktail menu too fascinating and my husband said his martini was ok. Waiter let me sample two wines to decide preference. Nice service too. Give this place a try.

Living in Hudson and owning 2 hospitality businesses in town we are always looking for and being asked to recommend restaurants that offer excellent quality, using local ingredients, in perfect portion sizes, provide friendly and efficient service - most importantly - fair value for it all. We've found that and more in Aeble. We had dinner from their new menu, which understandably will change with the seasons and what is available/fresh locally, and we thrilled with both the meal and the experience.
One of us started with a appetizer special of baked oysters with a sausage gravy and crumb topping (their version of oysters rockefeller/clams casino) - 4 plump oysters in their shell under a lightly crunchy topping and a creamy, smoky sauce were wonderful; light without being overly rich. The other had the Chicken Liver Mousse served with a homemade cherry compote, whole grain mustard and crunchy toasts in just the right size to start. Entrees of Duck Bolognese pasta (served with a creamy, homemade ricotta) and Whole Roasted Trout were both excellent, perfectly seasoned and the pasta with the bolognese was spot on al dente. We had each had one of the desserts: a light and refreshing lemon custard with local peaches and blueberries dressed in an elderflower water and a rich chocolate pudding (almost as dense as fudge) with a fresh whipped cream. Everything was outstanding!
Aeble's offers both inside and outside (in season) seating, and the decor is clean and bright, slightly Danish in feel; the clean lines and understated simplicity reflecting the cuisine - fresh, uncomplicated and delicious. What more could you ask for?
Personally we're not into all the gimmicks of "curated" this and "handcrafted" that (and the lofty prices that come with all that) which seem to have overtaken Hudson's restaurant scene. Instead, we'll take Aeble's perfectly prepared, beautifully presented cuisine over that hype any day of the week and will happily recommend Aeble to our guests. What a refreshing addition for Hudson!

But cheaper! What a surprise to find such an excellent new restaurant joining several others in Hudson. My friend and I up from the city were so pleased to happen upon it. Fresh, creative food with a lovely presentation that reminded me of SF. Knowledgeable, pleasant and attentive wait staff who could not have been nicer. The Manila clams and liver mousse on crostini were superb. These owners clearly have major cred and know what they're doing. Will be back.

The space offers great outdoor seating where you can people watch. The food is amazing!! It is a great addition to the Hudson food scene.
