We've been visiting Flux since it opened and loved the concept. There were times where some dishes were absolutely superb , and times where some were less than stellar , but still good or better than many along this strip.
All that said , we had the opportunity to catch up with a friend from more than 30 years ago , with his mum & sister , so we suggested Flux.
The menu allows for sharing or individual shares, whatever takes your fancy. It also varies often , so there are always surprises on offer.
I'll say that our friends enjoyed all that was presented , as no plate went back with uneaten content , all comments were very positive and we stayed for approx 4 hours.
As my wife & I were familiar with the ordering , we settled on 4 dishes , the initial being the slivers of sweet potato , herbed & spiced. Our 3 dishes were the Sweetbreads, the Ribs & the Soft Shell Crabs , all decent size serves.
My wife loves sweetbreads , these were crumbed and superbly cooked ,moist, bursting with flavour ! The Ribs ( I had to try !) were well cooked , tender & the sauce went well with it, as did the pickled veg , The Crabs were excellent , on a bed of herbed waffles with a mildly (to us, raving Chilli heads) warm sauce , but quite suitable sauce.
As we've found here previously , no additional seasonings were necessary.
Service is usually pretty good here , and was this day, with the minor exception of a bill mixup , due to shift change, but was all sorted swiftly & with no fuss.
We had the chance to exchange praise & pleasantries with the Chef b4 leaving , finding he was a US expat , and very happy to be here during this trying time. Will be happy to try his creations again !
So , yes , we'll be back !
