If you want recommendations, you should at least post a cuisine type and a budget. Otherwise, for "best," you will likely get extremely expensive places.
Since you are on a short layover looking for nice places, you may take airport express to the Hong Kong station directly and pick a restaurant in IFC or Landmark using the website wvmarle suggested. If you are after michelin stars, Robuchon, Lung King Heen, Caprice and Amber are in that area.
