I think May is on the early side for Alaska unless you are thinking of the last week of May. June-September would very likely offer a better experience.
don't waste money on a balcony suite. likely going to be pretty chilly. have fun
the one way cruise from Vancouver to Alaska with wanting to fly back to Vancouver is not the easiest as there are very few flights that go to YVR - Vancouver. Air Alaska serves Alaska with all their flights going to Seattle, so unless you onward journey is to the US a one way to Alaska is not a flexible idea.
