Starting at the end of our holiday:
We dissembark our the ship probably around 9-10 am and we want to be at the airport between 5:30 and 6 pm. Realistically we have about 7 hours in Vancouver.
As suggested by traveller47: We plan to do the following:
There's the seawall which runs right by Canada Place and will take you to Stanley Park. You can do a 2-3 hour walk around the park then catch a water taxi ( Aqua Bus or False Creek ferry) to Granville Island. Have late lunch there and browse through the various artists as well as the market...it's very easy to spend 3 hours on Granville Island. Catch a water taxi back to downtown then skytrain to Canada Place, pick up your bags and head to the airport. Or if you've had your bags transferred you can simply head to airport from Roundhouse Station on Canada Line
So with 7 days at sea to look forward to (Alaska) and having had a Rocky Mountaineer train ride, we would like to make the most of an evening a full day in Vancouver:

Day 8: Day at leisure / sightseeing in Vancouver. Overnight in Vancouver.
Any suggestions for mid-range restaurants within walking distance of our hotel? Preferably local cuisine.
We thought we'd hop on the SeaBus and take the 12-minute ride to the Lonsdale Quay Market - stay for 1 hour or so.
Then walk to and explore the Gastown area, again staying for an hour or two. We would have liked to join an organised walk, but they all only seem to run at night.
If its a clear day, we thought we might (around sunset, if possible?) go up the Vancouver Lookout for an hour or so.
It would be great if we could get on e.g. a craft brewery tour, but I'm not sure these run on Tuesdays?
Your comments appreciated, including additional suggestions (we are in our 60s, enjoy food, drink and sightseeing, but are not particularly interested in shopping).
