One day and a half in Vancouver - possible itinerary?

Starting at the end of our holiday:

We dissembark our the ship probably around 9-10 am and we want to be at the airport between 5:30 and 6 pm. Realistically we have about 7 hours in Vancouver.

As suggested by traveller47: We plan to do the following:

There's the seawall which runs right by Canada Place and will take you to Stanley Park. You can do a 2-3 hour walk around the park then catch a water taxi ( Aqua Bus or False Creek ferry) to Granville Island. Have late lunch there and browse through the various artists as well as the market...it's very easy to spend 3 hours on Granville Island. Catch a water taxi back to downtown then skytrain to Canada Place, pick up your bags and head to the airport. Or if you've had your bags transferred you can simply head to airport from Roundhouse Station on Canada Line

So with 7 days at sea to look forward to (Alaska) and having had a Rocky Mountaineer train ride, we would like to make the most of an evening a full day in Vancouver:

"arrival in Vancouver this evening. Overnight in Vancouver. B, L. Pinnacle Hotel Vancouver Harbourfront

Day 8: Day at leisure / sightseeing in Vancouver. Overnight in Vancouver.

Any suggestions for mid-range restaurants within walking distance of our hotel? Preferably local cuisine.

We thought we'd hop on the SeaBus and take the 12-minute ride to the Lonsdale Quay Market - stay for 1 hour or so.

Then walk to and explore the Gastown area, again staying for an hour or two. We would have liked to join an organised walk, but they all only seem to run at night.

If its a clear day, we thought we might (around sunset, if possible?) go up the Vancouver Lookout for an hour or so.

It would be great if we could get on e.g. a craft brewery tour, but I'm not sure these run on Tuesdays?

Your comments appreciated, including additional suggestions (we are in our 60s, enjoy food, drink and sightseeing, but are not particularly interested in shopping).

You can certainly 'tour' the craft breweries on your own. I appreciate it can be easier with a guide to take you around, but the East Van breweries are all about four blocks from each other, so you could get a taxi to drop you off, walk around as many as you can manage and still remain upright, and then just get someone to call you a taxi to return to your hotel. Its an option anyway.

You could focus on 6-13 on that map, or 19 - 25 (seedier end of town, but the breweries have brought in so much foot traffic that its fine).

Thanks v. much V67 - didnt realise that a) there were so many craft breweries in Van or that you could just walk in etc. There doesnt appear to be any scale on the map; we are staying at Pinnacle Hotel, which I believe is close to Canada Place? How "walkable" is the route back to our hotel from e.g. No 25 (Doan's Craft Brewery)? And possible / easy is to get there by public transport?

It would take 21 minutes on the #209 "Vancouver" bus, included a 7 minute walk at the end to the hotel. $2.75 fare.

You do not want to walk from there to your hotel. Some of the way is a sketchy area, not dangerous but you (and I, TBH) would not feel comfortable walking through around Main and Hastings at midnight.
