Suprême de pintade aux morilles, sauce pain d'épices, purée de topinambours et légumes racines glacés: the Guinea fowl was perfectly cooked. The meat was tender and the skin was just barely crispy. The sauce was very Christmas appropriate, just reminiscent of gingerbread. The artichoke purée and roasted veggies were delicious and the mix in textures accompanied the bird well.
