We went here on our first night having looking at all the good reviews. The restaurant did not disappoint and the food was excellent, I had the salmon and leeks and my mother had the tuna steak, I would recommend both! The staff were friendly...and attentive, however, they could maintain the garden a little better as my mother was partially sitting in the bushes and got bitten by insects. Other than that, we thoroughly enjoyed it and had a nice evening.More

Carcassone was warm that day. Very warm. And, as a result, our 10 month old baby was sleepy and cranky. So, when hunger struck, we needed somewhere in a terrace or courtyard that had space for a buggy and use of a highchair if Toran...decided to be awake. After walking around and finding many of my hitlist places closed, and others fully booked, we decided to try Le Chaudron. We were not disappointed. Firstly, the setting is beautiful: old stone, creeping ivy, a balcony illuminated gently, geckos climbing the walls. Perfect. Secondly, the service was excellent. Our waiter spoke both excellent French and English and let us choose which language we wanted him to use- great if you want to practise your French. Food was brought out promptly, and they were great with our strange requests re Toran. Now to the food- we were not that hungry, so they kindly allowed us to share their 35euro formula menu. We found this perfect for our appetites. We could have eaten everything on the chosen menu, but we chose the tuna tartare to start, followed by a fillet of beef with a morrel sauce, and the classic iles flottantes to finish. Everything was delicious. Thick chunks of tuna were served with a basil oil, little chucks of cornichon and olive- different but it worked really well, and the tuna was beautifully fresh. I would have liked a bit more zing, but Tom thought it was perfect. The fillet of beef was perhaps a little thin for my liking, but it was melt-in-the-mouth, and the sauce was decadent cteamy and full of unami flavours. Yum. It was served with ovals of crispy yet fluffy chips and some Mediterranean veg. Just right. Finally, the iles flottantes. Served cold, which was a bit of a surprise, the meringue was light and gooey, the creme anglaise reminiscent of childhood dreams of custard, and the whole thing was topped with sweet crispy almonds which added texture and another level of flavour. The perfect ending. Oh- and did i mention that Toran slept the entire time! It was a great meal, and we left content and smiling. The only thing that perhaps slightly let it down was the house red wine- sub par to the norm in France, and more like the British equivalent. However, we would still highly recommend eating here if you are traversing the medieval city, especially with a baby in toe. JMore

Carcassonne city has plenty of places to eat, but as normal in such a touristy place it can be pot luck to find anywhere decent: at Le Chaudron we struck lucky: we had a great lunch (can recommend the salad and cassoulet at 15€) and...was a perfect finish to a short break in the region. When we visit a new place, we like to try as many local delicacies as we can. Our mission in Carcassonne was to eat cassoulet. Research on TripAdvisor and in Rick Steves’ book led us to Le Chaudron and we could not have been happier....The recipe is the owner’s grandmother’s, it is authentic, and its crusty broiled top is to die for. I had pumpkin soup, the cassoulet, and split a chocolate-drenched poached pear with my wife, who had the cassoulet with a side salad. We split a small bottle of wine. This was one of the best meals we had in France and it is one we will never forget.More

I enjoy trying local dishes and so the Gizzard Salad followed by a big dish of Cassoulet was my choice. Both were excellent and the service was the same. Only disappointment was the Tarte Tatin, it was nice but not in traditional style. Good value...on the set menu's.More

Bright, modern restaurant in the heart of the medieval city. The menu offered fixed price options and a la carte for lunch. The cassoulet was very popular but we enjoyed duck, steak and salmon. Would have been 5* if the duck and steak had been...served a point - our dishes were slightly overcooked but still delicious. The salmon dish would have benefitted from the saute potatoes served with the meat dishes, but was still a good dish. The cafe gourmand was excellent.More

As we wanted to try a local dish, We ordered 2 X Cassoulet Au Manchon de Canard with green salad. The green salad came as a starter beautiful fresh salad, with balsamic dressing. Then came the local dish a casserole with belly pork, sausage, Duck...leg and white beans. It was really tasty and better than I thought it would be, to the point I intend to try and get the recipe to try it at home. We had a beer and Cafe AU Lait and the bill came to €37. Real value for money. Would highly recommend.More

Staff very helpful, food fantastic. The restaurant is in a courtyard, with lovely ambience, but when it rained we were able to go inside. The wine list was good, and the waiter very helpful.

Good value set menus, but the prices of individual dishes are also sensible given the quality. The cassoulet was particularly good. Waiting staff were very friendly and efficient and the outside tables are in a great setting.

Warm welcome there... good service and finally a good cassoulet I tried manny around in the last 3 days ... the best one is here .... very close to chops and the heart of the city best spot around ... go there and enjoy your...time and food.More
