As the first place in Spain to see the sunrise, Minorca is like the country’s ambassador to the morning. Beaches here are beautiful and, surprisingly, relatively empty. The jewel-coloured water is a magnet for waterskiers, windsurfers and sailors. Playa De Binigaus beach is perfect for families, while Cala Mitjana is an idyllic spot for romance. Head to the town of Alaoir to nibble on some fresh local cheese or turn back time in the charming fishing village of Fornells.

Southwest of Seville, Jerez is a well-heeled place. It’s the home of the Royal Andalusian School of Equestrian Art and its famous dancing horses; if you’re on a budget or can’t be there for a formal performance, it’s worth dropping in to catch a morning training session. The other major reason to visit Jerez is to sample its most famous product—sherry. You can do this at a number of bodegas associated with the world’s best-known brands, including Bodegas Tio Pepe, The House of Sandeman, Jerez, and Pedro Domecq. They’ll soon have you knowing your amontillado from your oloroso. There’s also an Alcázar, dating back to the time of the Almohads, which features a small mosque, now the chapel of Santa María Real.

The Mediterranean's biggest island is separated from the mainland by the Strait of Messina. A mountainous spot, Sicily's coast and its small islands sit at the foot of volcanoes, including Etna, Stromboli and Vulcano. The Greeks, Romans, Normans and Catalans all left their mark on the island in the form of Byzantine palaces, Gothic castles and Baroque flourishes in capital Palermo. Home to the nation’s capital and biggest city of Warsaw, Central Poland is the entry point for most travelers who arrive in the country by air. Industrial Lodz, the second biggest city, is here too, almost exactly at the country’s middle. Poznan and Torun are also popular with tourists, each boasting very pretty Old Town areas. Kampinos National Park, Poland’s second-largest, covers about 150 square miles. It's within easy reach of Warsaw and is a great site for hiking, cycling and skiing.

The moody, romantic Scottish Highlands start at Loch Lomond just north of Glasgow. Comprising a slew of mountain ranges, this sparsely populated land is best seen by train on the West Highland Line. Mountains, lochs, bright heather and rhododendrons give way to white sand beaches and rugged coves as the train nears Mallaig. For a more active take on the region, hike the West Highland Way or visit the Trossachs National Park. Ben Nevis, a popular climbing spot, looms over the town of Fort William.
