Perfect stop in the region for a surprising city. The hotel is right down town and has a very large parking which is very convenient. Rooms are very large with well appointed bathroom (separate toilets). Very quiet and we found the bed very confortable. Very pleasant and spacious dining room including rather high ceiling. Quillan is full surprise and much more animated than expected. We met various local people who did welcome us.

We didn't expect much before we arrived, but the room was fantastic: very large, big bathroom & shower, very quiet, awesome bed. Breakfast was over the top, and I highly recommend it. It might look like just another big hotel, but the rooms are fantastic!

I have been going to Quillan now for some 5 years and have stayed at the hotel La Chaumiere many times. When we first stayed there the current owners had only just taken over and were in the process of refurbishing the entire building--and what a job they have made of it.
The rooms are very modern and very comfortable. The showers are very powerful and the towels are plentiful, not like in some French hotels.
The dining in the hotel is second to none- Dinner is an expierience-Set in the stunning dining room, we spoiled ourselves last time we were there and had the 7 course set dinner. I chose the Pidgeon for my main meat dish and I wasn't dissapointed. The meal was helped down with a couple of bottles of the "Local Champagne" Blanquette. served to your table for 11 euros a bottle. Fantastic.
The breakfast is the best.. Served on the open air decking/roof terrace, lovely relaxing music in the back ground, overlooking the foothils of the Pyrenees. Buffet style help yourself to an aray of fancies from pancakes to fresh yogurt and honey and fresh fruit. Bacon sausages and eggs too. Then relax in the big comfy chairs or hamocks and chill out for an hour or so in the glorious sunshine.
When staying at this hotel you grt that feeling that you are million miles away from anything you have known previous. The hotel is a little gem and if you stay ther you will want to go back with your friends or familly just to show them how good it is.

Sadly a rather poor show this evening.
Slow service, actually very slow, but due not to the young lady serving, but due to her being left alone to serve about 30 covers, food and drinks 😡.
The mains were quite nice, but the cheese platter? Two microscopic pieces of cheese, one of which had certainly seen better days, and no bread until requested, twice!
Shall we return, I think not 🤣

This is a very good hotel in a town of limited choices. The interior of the rooms are surprisingly modern and large, with the exterior fitting in well with the old-time charm of Quillan itself. It's just opposite the train station where we found ample free parking.
Check in was smooth and friendly. Unfortunately, we didn't have time to eat in the hotel but it looks as though it's popular with hotel clientele and outside guests.
All in all, very happy with this stay!

upon arrival (late) we had the easiest of checkin's ,the manager (Olivier) is a very friendly family man who had everything ready for our stay. The staff are very well trained and very friendly .The room was very clean and modern and the shower was always hot .The towels were very clean and replaced daily and the room was cleaned thoroughly daily . Breakfast was well catered for and was very relaxing .The resturant was well laid out and again the staff were very well mannered and obliging ,the food was very well presented and fresh and excellent to eat .The value in the resturant was good and the choice of wine was great . The underground parking was great for access with baby and buggy and overall we had a pleasant stay. We will be staying here again when we are back in the area. Thanks !! Sam & Marie

Excellent stay, the evening meals are excellent although we find it hard to echo the views that the 'breakfasts are to die for'.
The 'Madame' appears to do most of the admin whilst her other half sits in the lounge reading. But their son and his Vietnamese wife work hard in the restaurant and produce food of a very good standard.
Parking is easy in front of the hotel.
From a quick visit Quillan didn't seem to have much to see and do but it is a good place to base yourself to visit some great places.
Recommend this hotel.

We booked this hotel for a night whilst on a roadtrip in France and Spain. We popped out to visit friends who live in the area and got back around 11.30pm to find the hotel barred and bolted up for the night. We tried knocking on the doors to no avail and it was by pure chance we tried the restaurant door and found it was unlocked. Anyone could have walked in off the street and helped themselves to the contents of the bar. It was only after we got in and searched through a folder in our room for while that we discovered, in very small writing hidden away amongst a load of other blurb that there was night acces through a small door in the back street. No mention of which was made when we booked in.
The hotel itself is pretty unremarkable & the car park (extra fee required) stunk of something that smelled like rotting meat. We were going to book a meal here but that put us off and we went elsewhere. We didn't even have breakfast (which was an extra on the tarrif) here. Our room needed a good dusting and it had a smell of stale sweat about it. The bathroon was a bit grubby as well and smelled a bit of damp. Not a hotel I'd rush back to.

We had driven virtually across France. Starting from Leipzig, Germany as we travelled south the air became balmier, sunnier and French. However our dilly dallying, taking in the French ambience and cuisine made us late for our hotel arrival time. After passing the village of Quilaln twice we finally pulled up outside La Chaumiere at three a.m. There was not a soul in sight. We tinkled the bell. Nothing. Almost resigning ourselves to sleeping in the car we heard the sound of voices coming from down the street. The voices were that of the cafe owner a block down from the hotel La Chaumiere. In our falting, school age French we explained our sitatuion. The cafe owner rang La Chaumiere and the owner opened up for us. The air outisde had chilled and our tired muscles welcomed the warm shower, luxurious beds and beautiful decor.. It was a great place to satge daytrips around the beautiful Languedoc.and the staff were friendly and very accomodating and hospitable. La Chaumiere had a family friendly feel that we really enjoyed and with our four year old in tow this was one quality that stood out for us. Not to far from the Mediterranean coast and set in the foothills of the Pyrenees, La Chaumiere is my dream hotel come true.

My wife and i spent 3 nights at Hotel la Chaumiere in October. I chose it on the basis of some very good reviews and on the fact that Quillan, while not a place of huge interest in and of itself, is a very good base for visiting Cathar castles both to the east and west.
all this worked out pretty much as i had planned. The hotel room was very modern - the owners have obviously put a lot of money into renovation - while the restaurant has been restored to a more traditional looking site. Since we were staying 3 nights, we received a discount of 5 Euros each on the demi-pension. We also received free garage for our vehicle.
The food at both breakfast and dinner was excellent, and at the rate of 25 Euros each per day was a real bargain.
Our room for 75 Euros a night was spacious and spotless. All in all, I would say this was an excellent place to stay, especially if you are interested in visiting the Cathar castles and the surrounding beautiful countryside. If you look at a map of htis part of France you'll see why.
