Severn of us enjoyed a wonderful 3 course lunch here last sunday. We ate outside on the small terrace at the front of the hotel and Marielle worked very hard ( on her own) to serve us and another twelve or so guests. Didier ( presume her partner) is the chef and this is very much a 2 -person show. We had to wait between courses but not unduly by French standards. And this was more than made up for by the fabulous food - fresh salmon cru, gesier salads, huge mussels to name a few of the starters, followed by chef's delicious cassoulet, salmon in a lovely sauce, beef cooked perfectly with a sauce. Puds were to die for too - we had a scrummy creme brulee and a superb apricot mousse and coulis. The wine list was extensive and super wines at 14.50 euros.
The 3 course menu was 19.50 euros - excellent value. It always helps if you can speak French and Marielle certainly responded warmly and amusingly in our conversation. This hotel is a beacon in this otherwise very quaint but very jaded little market town(village)

I can confirm all previous reviews but would like to add that Madame speaks wonderful French which I could perfectly understand although this is only my third language and she had a lot of patience with me when I cobbled together my French sentences. She also changed the booking to accommodate my adult daughter.

However, what we missed more was a piece of soap and more toiletries. We actually bought this plus shampoo and conditioner and paid 30 Euros for checked-in luggage because of it. We did not get plates for breakfast, only saucers, and there was no bowl for the corn flakes available which were apparently for decoration purposes only. It must be said that the next supermarket is 50 km return so we did understand this to some degree. The white towels in the bathroom were great and changed daily, and there was some phantastic bio olive nettle shower gel.

We also got served on the delightful terrace, on the third trial, and while the menue is somewhat expensive, and we preferred to have lunch elsewhere on our trips rather than dinner in the hotel, the choice of wines is phantastic at great prices.

We loved the hotel and its people, and would definitely come back. It is in comparably perfect shape in Chalabre which is a very old Bourgeois village with a lovely old tree alley and antique unreformed terraced houses that would make the perfect scenery to produce a film on French history.

We stayed here for 4 nights in August.The hotel was very clean and comfortable.The decor is very dated,and is in need of some new decor.We only had breakfast every day so cant give an opinion on the food.The hotel was fairly busy at lunchtimes and on an evening which indicates its popularity..We would stay again

We are Vegan in France, so it’s difficult to find somewhere good to eat. However, this oasis is a real gem. 10/10 for inspired menu, cooked by a master chef. We had the midday fixed menu and it was incredible value for money - 5 star meal at Macdonald’s prices.
Service was impeccable and Didier, the owner and chef takes great pride in his business- and it shows.
Advisable to advise of vegan/vegetarian requirements.

The previous evening we had really encounter we the owner Didier so we decided to have lunch there the next day. What a nightmare! The owner's wife is an awful and nasty host. The dinning room was a bit chilly so we decided to seat by the working radiator but that was not what she wanted so she asked us to move next to the none working one. We we mentioned that it was called she challenged us about her dining room being cold. The table was next to a massive TV with sound blasting out. We asked if we could switched it off but she refused arguing that the workers wanted it. We ended up walking out...

I always try and see the best in any establishment if I possibly can..... however
This place is overpriced and the service and attitude of the staff is horrendous. We visit this area of France regularly and intend to buy our retirement home here as we love the area and the people. The only plus side is that there is many beautiful restaurants in the area and no-one need to be subjected to this type of attitude and behaviour we encountered in this place. We will never set foot here again and will actively discourage friends and visitors from doing so.
In short.... AVOID LIKE THE PLAGUE !

It did not matter that the food at this place was good, the attitude of the woman there was appalling, she does not deserve our well earned cash being spent at her place. Do not go.We will certainly be telling everyone this, she needs to change her attitude.

We recently visited my parents who live in Chalabre. We went into the village one evening for drinks and decided to go to the Hotel de France. After sitting there for a good 10 minutes while members of staff walked past us and ignored us, we left. Appalling way to treat customers. We will be regular visitors to Chalabre, however we will not stepping foot in the Hotel de France again!

Please do not visit this restaurant the service is just atrocious. Rude manner and horrendous attitude. The food to be fair was okay if slightly overpriced but the service was probably the worst I have had anywhere I have ever been and i have eaten at a lot or restaurants. The worst possible start to a holiday but not a reflection of other places in the area although you will struggle to get a decent meal actually in the town of Chalabre.

We have just returned from a self-catering holiday in France, 45 minutes form Carcasonne, we had a fabulous time but just want to warn anyone else who visits this area to avoid the Hotel De France in Chalabre. We were looking for somewhere to eat as there wasn't much open being late June, everywhere opens in July, apparently. The hotel was open so we booked a table for dinner for 6 adults and we had a toddler and a baby in a pushchair with us which we attempted to explain when we booked. There was only one person on duty taking the bar order, waiting on tables, taking the money, etc. (We assume she didn't cook as well) The food was OK but the service and the attitude of this woman was awful, the children were well behaved so we assume it wasn't that but she treated us like dirt and tried to overcharge us when we paid the bill. We were told by another restauranteur that she has been known to throw people out and even slapped someone. Just wanted to say avoid this place like the plague.
